Tomato Dill Soup with LifeField Buckwheat

1 cup water
1/2 cup LifeField Buckwheat
pinch of salt

Prepare LifeField Buckwheat according to basic recipe instructions on package. Set aside.
Tomato Dill Soup

Ingredients:
5 large tomatoes
1 large onion sliced
1 large clove garlic halved
1 teaspoon salt
1/4 teaspoon freshly ground pepper
3 sprigs fresh dill (cut up)
2 tablespoons tomato paste
1/2 cup cold water
12 oz. chicken stock
3/4 cup cream
METHOD:

  1. Peel a. slice tomatoes into a saucepan.
  2. Add onion, garlic, salt and pepper, dill, tomato, paste and water. Cover and simmer for 15 minutes.
  3. Transfer to container of electric blender. Add chicken stock and cream to mixture. Turn on high and blend for about one minute.
  4. Chill. Stir in cooked LifeField Buckwheat. Serve garnished with chopped dill.

LifeField Buckwheat is a great substitute for just plain rice. And the recipe is so easy and tasty! ENJOY!

LifeField Buckwheat Pancake & Waffle Mix

Quick and Easy (Makes about 10 delicious, light, five inch pancakes)*

1 cup LifeField Buckwheat Pancake & Waffle Mix
1 3/4 cups milk
1 egg beaten
2 tablespoons butter melted
3 drops vanilla
1/2 cup water

  1. Sift dry mix into milk. Whisk until smooth. Add beaten egg, melted butter, vanilla and gradually add water to your liking**
  2. Butter skillet and heat until drops of water sizzle.
  3. Pour 1/4 cup of mixture onto skillet. Butter will begin to bubble. Heat approximately 1 1/2 minutes on both sides, low to medium heat.

For a delicious taste treat try LifeField Buckwheat Pancakes with blueberries. Simply stir 1/4 cup fresh blueberries into batter, then follow basic recipe.

*Contains no additives, fortifiers or preservatives.
**A little more water makes slightly thinner pancakes.

Apple Muffins

1/2 cup LifeField Buckwheat flour
1 1/2 cups all purpose flour
1/2 cup sugar
1 tbs. baking powder
1/4 tsp. salt
1/4 tsp. cinnamon (optional)
3/4 cup apple juice
1/4 cup margarine or butter melted
1 egg
1 cup chopped walnuts
1 large tart apple, peeled, cored and chopped

  1. Heat oven to 400°.  Line standard size muffin cups with paper backing cups or grease bottom of 12 muffin cups.
  2. Mix first five dry ingredients (plus cinnamon) in large bowl.  Stir in apple juice, melted margarine or butter, add egg until blended.  (Batter will be lumpy).  Stir in walnuts and chopped apple.
  3. Divide batter evenly among muffin caps filling two thirds full.  Bake 20-25 minutes or until toothpick inserted in center comes out clean.
  4. Cool five minutes.  Remove from pan.

Makes 12.

 

Bell Peppers and Buckwheat

6 bell peppers
1/2 cup onion chopped
1 bouillon cube
1 cup water
fresh parsley to taste
salt & pepper to taste
small can of tomato sauce

Prepare LifeField Buckwheat groats using Basic Recipe.  Add onion and bouillon cube dissolved in 1 cup water.  Add parsley, alt, pepper.  Stir well into LifeField Buckwheat groats.

Cut off tops of peppers.  Core.  Boil peppers in 4 quarts of water for about 10 minutes or until skin softens.  Remove from water.  Stuff peppers with LifeField Buckwheat groats mixture.  Place peppers upright in large skillet with water on bottom to absorb heat.  Pour tomato sauce over peppers.  Cover and simmer for 20-25 minutes.  Baste occasionally.

Serve on a bed of lettuce with steam carrots.

I finally had time to experiment in the kitchen and made your Buckwheat.  I added it to roasted vegetables with some spices and soy sauce and WOW!
This morning, I cooked up some of the leftovers with vanilla soy milk, walnuts, pinch of cinnamon and allspice with fresh blueberries on the side and …another WOW!
