1/2 cup LifeField Buckwheat flour
1 1/2 cups all purpose flour
1/2 cup sugar
1 tbs. baking powder
1/4 tsp. salt
1/4 tsp. cinnamon (optional)
3/4 cup apple juice
1/4 cup margarine or butter melted
1 egg
1 cup chopped walnuts
1 large tart apple, peeled, cored and chopped
- Heat oven to 400°. Line standard size muffin cups with paper backing cups or grease bottom of 12 muffin cups.
- Mix first five dry ingredients (plus cinnamon) in large bowl. Stir in apple juice, melted margarine or butter, add egg until blended. (Batter will be lumpy). Stir in walnuts and chopped apple.
- Divide batter evenly among muffin caps filling two thirds full. Bake 20-25 minutes or until toothpick inserted in center comes out clean.
- Cool five minutes. Remove from pan.
